Get ready for a culinary journey to the sunny beaches of Curaçao with this irresistible dish: Arepa di Pampuna! 🏝️

These delicious pumpkin pancakes captivated my taste buds when I was at Playa Lagun for the first time, where I ran my diving school. Every weekend there was a friendly Señora passionately baking these arepas. At that moment I knew I had to get my hands on this recipe.

Years passed, and although I now lived in Toni Kunchi and had eaten countless Arepa di Pampuna, I had never made one myself. That changed when I got a calendar of local recipes, including this gem. I made a few attempts, but each time ended in disappointment.

Luckily, the internet put me in touch with Soul Food's Super Dushi Chef. For the very first time I was proud of my own Arepa. This dish is now on the Happy Breakfast menu. I now consider myself a pro at making them. Over the years I have developed my own recipe, which is not only healthier but also irresistibly tasty. I now use more pumpkin, cut out a good amount of sugar and reduce the amount of flour to just half. And that is not all! Each pancake gets exactly three juicy raisins, making them a real treat.

The pancakes are baked light brown. The subtle sweetness of the pumpkin comes to life and enchants your taste buds. In short, these pancakes are 'hopi dushi' - a delicious treat that will leave you begging for more." 🌟🍽️And now, to get you in the tropical mood, I'm sharing my recipe below.

For two persons:

🥞 250 g pumpkin

🥞 1 egg

🥞 1/2 teaspoon cinnamon powder

🥞 1/2 tablespoon baking powder

🥞 50 ml milk

🥞 1 tablespoon sugar

🥞 50 g flour

🥞 pinch of salt

🥞 3 raisins per pancake

🥞 oil for frying


Preparation:

Start by removing the pumpkin seeds and cutting the pumpkin into pieces of approximately 4x4 cm. You can just leave the peel on. Add salt to the water and cook the pumpkin for about 25 minutes. When the pumpkin is soft, it can be pureed with a hand blender or in a food processor.

Now add the rest of the ingredients and mix them into a lumpy batter. The batter is thicker than that of traditional Dutch pancakes, but if it is too thick you can add a little milk. Heat some oil in a pan and fry pancakes of about 8 cm in diameter. Then add 3 raisins in the center of each arepa. Turn the heat down. Turn the pancakes when they start to dry on the edges and fry the other side for a few more minutes until they are nice and light brown.

This Arepa di Pompuna is not only suitable for breakfast, but also as a dessert with a scoop of vanilla ice cream, guaranteed to impress your guests! 🍨🌴
